Martin Bek, former restaurant manager at Uformel, leads the guest experience, ensuring every visit is warm and welcoming. In the kitchen, Aleksander Antonijevic, former sous chef at Palægade, brings his expertise to the forefront, crafting dishes that highlight culinary craftsmanship and seasonal ingredients.

From Classic Roots to Michelin-Level Excellence
Martin Iuel-Brockdorff Bek is an experienced sommelier and restaurant manager with an impressive career in Danish gastronomy. His journey began at the renowned Le Sommelier and Krogs Fiskerestaurant, where he built a strong foundation in classic cuisine and hospitality. In 2003, Martin joined the team at formel B, playing a key role in the restaurant’s development and success.
A New Venture with Uformel
In 2014, Martin took the next step in his career as co-founder of Uformel, a restaurant that quickly gained recognition for its relaxed atmosphere and high gastronomic standards. As both sommelier and restaurant manager, he helped shape a unique dining experience, where guests could enjoy innovative dishes paired with carefully selected wines.

Now, Martin steps into his new role as partner and restaurant manager at Restaurant Glassalen in Tivoli. Aleksandar Antonijevic – Partner & Head Chef at Restaurant Glassalen
A Recognized Name in Copenhagen’s Restaurant Scene
Aleksandar Antonijevic is a well-known figure in Copenhagen’s culinary world. Now, he steps into his role as partner and head chef at Restaurant Glassalen in Tivoli, where his passion for craftsmanship and attention to flavor will be the driving force in the kitchen.
From a Bagel Shop to Michelin-Level Cuisine
Aleksandar’s journey into the restaurant industry began with a part-time job in a bagel shop, where his interest in food and service was first sparked. He initially pursued a catering education, but when his apprenticeship placement closed, he shifted his focus to becoming a chef. He completed his training at Restaurant Viva, where his culinary talent truly began to flourish.
His career quickly gained momentum, leading to key roles at some of Copenhagen’s most renowned restaurants. Aleksandar was involved in the opening of Restaurant Lusso for the Sovino Group, worked at The Asian Market, and became head chef at Café Victor at just 23 years old.
From Tokyo to Palægade – and Now Glassalen
A defining moment in Aleksandar’s career was his time in Tokyo, where he worked at the three-Michelin-starred restaurant L’Effervescence. Here, his passion for precision, technique, and attention to detail was refined to perfection.
After a year in Japan, he returned to Copenhagen, where he was introduced to Restaurant Palægade. He quickly became an indispensable part of the team, taking on the role of sous chef, where his leadership and eye for detail helped shape the kitchen’s success.
A New Chapter at Restaurant Glassalen
As partner and head chef at Restaurant Glassalen, Aleksandar brings his vast experience, technical expertise, and deep love for classic cuisine to a new stage. His focus will be on blending tradition with modernity, creating dishes that surprise and delight.
He has a strong passion for Danish cuisine, particularly classic dishes with a contemporary twist—a philosophy he mastered at Palægade. His ability to perfect every detail on the plate makes him the ideal head chef to lead Restaurant Glassalen into a new culinary era.
